Lentiltastica (a recipe)

Hi! I'm new to the recipe blogging. Thanks for the invitation, Marianna! I made this soup the other day and it was great. Enjoy! ~Amy~

Note: I didn't write anything down or measure it so the spices are guesstimates.


LENTILTASTICA

VEGGIES & FRESH SPICES
1 onion
2 stalks celery
2 carrots
1 potato
1 big ass tomato
5 cloves garlic
1 T fresh ginger
chopped cilantro (for garnish)
LEGUMES
1 C green lentils
1 C yellow lentils
CARBTASTICA
1 C brown rice
WHATNOT
2 T tomato paste
1 veggie boulion cube thingy
6-8 C homemade veggie stock (depending on how thick you like your soup)
DRY SPICES
1 T tumeric
1 T curry
1/2 tsp crushed cumin seeds (use a mortar & pestel)
1/2 tsp coriander
1/2 tsp chili flakes
Salt and pepper to taste

Finely chop all veggies, garlic & ginger. In your stock pot... saute onions and celery until softish. Add carrots, potato and tomato. May need to add some broth to help with cooking and minimize stickage. Add all spices (except salt & pepper). Saute until everything is softish. Add lentils and brown rice and saute another 2 min or so. Add broth. Bring to boil. Add veggie boulion thingy and stir it up (Little Darlin', Stir it Up). Turn down heat. Cover. Simmer until lentils/rice nearly done (45 min?). Add add tomato paste to thicken the broth. Continue simmering until lentils/rice are all soft and yumtastic.
Garnish with chopped cilantro and chow it all down with crusty bread and a bottle (or two) of red wine!
